Grilled Seasonal Vegetables
Note: You can use any combination of vegetables you like. If you’re using firmer vegetables like carrots, cut them thinner than the other softer vegetables. I used zucchini, red bell peppers, red onions, spring onions, mushrooms and sweet pea pods. I highly recommend a grill basket for this recipe.
- 3 1/2 – 4 pounds assorted seasonal vegetables
- 2/3 cups olive oil
- 2 teaspoons Savor All-Purpose Seasoning
- Fresh herbs (optional)
- Preheat grill on high
- Place the vegetables into a large bowl, add the oil and Savor, toss to coat.
- Add the vegetables to the grill basket and cook for 10-15 minutes stirring occasionally.
To serve, place the vegetables on a platter and top with fresh herbs. Can be served hot or room temperature.
